I am having the same issue as this. Here is the sequence;

1. The photos were taken with an iPhone or an iPad and appear in my Photos.library on my Mac via iCloud sharing. I did not edit them while they were in photos.library.

2. I then exported them from my Mac  Phtotos.library  into a new folder on my Mac (so that I could more easily order them chronologically in preparation for editing and for inclusion in a slideshow).

3. I then used Affinity Photo where I often adjusted the colour and also cropped them. No problem.

4. However, I sometimes want to re-edit some of these photos, and this is when the problem occurs. When I open the previously Affinity-edited photo, the colours change and the screen becomes decidedly paler. I can see the original photo simply by tapping on FILE in Affinity Photo, but the original photo reverts to the pale photo the moment that I try to use one of the editing tools. I can edit the pale photo, but I cannot see the impact of the change without saving the edited file back into my photos folder on my Mac, and then reopening the photo again in Affinity Photos. It is quite frustrating.

Is there anything that can be done, or am I just stuck not being able to re-edit photos that originally come from the Apple photos.library?

In addition to Callum's request above, please let us know what release of macOS you're using, and whether you have recently updated to that version of macOS? And did you update macOS between steps 3 and 4 above?
