Publisher 2: background colour menu item

How does one change the background colour of a selected item in a menu from its impenetrable blue?

This is tied to the highlight colour you have selected in the appearance section of your Mac OS preferences.

Thanks! I would never have looked there. For one, it's not the highlight colour I had chosen.

I changed the colour there and had the result I sought. I changed it and back to blue again, which gave me in Publisher an usable blue.
