Publisher 2: Document Spell Checking in Spanish (MacOS)

My document is written in Spanish, but Publisher does not recognise the language, so every word gives an error. Where is the Setting to make this change?  Specifically for the language of the Document; not the UI.

Hi. To do this, select all the text with the Frame Text tool. Open the Character panel by choosing Window > Text > Character. Expand the Language section of the panel and choose Español from the Spelling list.

Or if you're using text styles, edit the applicable text style, select Language in the left pane, and choose Español from the Spelling list.
