If I define "space before" in a paragraph style, this is also inserted after it and not only for text with this text style, but also for texts formatted differently. Furthermore, I don't really understand why changes to text styles are not always reflected in texts formatted in this way.

Looks like you have one Paragraph Style 5-Menu-Untertext applied to everything. Then you have overridden the various font traits with Character Styles and also applied a second Paragraph style to some of the 5-Menu-Untertext paragraphs.

Here are three screenshots of what you have applied to three consecutive letters. Note where the text cursor is, one of the "letters" is a space.

I have never mastered color management, period, so I cannot help with that.
