I am using a windows 11 surface laptop.

Anytime I create a new booklet, I select the following:  press ready letter, facing pages, it automatically says 8 1/2 x 11, create.

When it opens, it is in ledger form and 11 x 17.

This did not use to happen, and I don't understand why it is now.  No matter how many times I try to create a new booklet this happens every time.  When I try to correct it in document setup, the first and last page are really wide.

Please help.

"Facing Pages" means you will have two pages (each 8.5x11) side-by-side. That will give you 17x11, which you are seeing.

The only way that would not happen would be to not choose "Facing Pages".

Are you starting on the Left side or the Right side?

I have never mastered color management, period, so I cannot help with that.

now i click create and the next screen shot is what I get when I open the document setup.

That looks right to me. You're seeing the dimensions of the Spread, as you requested.
