Is there a way to set different fonts for multiple languages and save them as paragraph styles? For example, if there are English, Chinese, and numbers all in one document.

Since text language settings are character properties you can save each of them as character style. (alternatively you can save them as paragraph style and assign them as character style only for use within paragraphs of other languages)

Nevertheless, any style, regardless of paragraph or character style, can have only one language setting. – How else should it work with several languages in one style? Even if the app could detect by the words their language it would still conflict & fail with those words that exist identically in various languages, regardless of an identical or different meaning.

Unfortunately I don't believe so, as you can record a Macro from the Photo Persona within Publisher - though you cannot then access the Find and Replace dialog to include this within the recording, my apologies.

Wish there was at least a way to have separate fonts for numbers in paragraphs, this works well in word。

"At least"? You seem to be convinced that creating a text style with more than one language would work for you. Can you explain a bit more how such a feature might detect a specific language within text?

For certain characters, e.g. numbers/digits, it would require GREP styles that would work other than Find & Replace for both existing and future text. Unfortunately this feature was requested several times for APub, maybe you add your vote to this thread (which seems to be the most recent one concerning GREP styles / though GREP is also mentioned several times within the feature request for "Scripting".)

The alternative I have now is to use regular expressions for search and replace, is there a way to record a macro for this process inside publisher?

I am not sure if I miss a reply above your post which seems to answer @Dan C. – However, it appears that the Macro Panel with activated Record gets deactivated (ignored) if I leave in APub the APhoto Persona, so it doesn't work to record F&R.

Maybe it helps partially to use in F&R the existing menu for 'recent finds' / 'recent replaces', unfortunately it appears not to include certain style options though.
