You simply don't put a page number field on that Master Page. Any document pages will physically have numbers, which you can see in the Pages panel and in the Section Manager, but they won't be visible on the page. If they're visible on the new pages, that sounds like your new pages may have two Masters applied. What do you see in the Layers panel, and when you hover over a page in the Pages panel?
