In Photoshop, we can open any vector PDF file, and then we have this dialog box:

After importing and opening the file, we have one flatten raster layer

How do I achieve this with the Affinity apps?

I have complicated pdf files with many vector shapes, fonts, etc. and would like to open them as single flatten layer raster files.

Not as convenient as in PS (the Affinities preserve the vector data), but you can do it. PLACE the PDF (Passthrough) in AP and rasterise them afterwards if needed.
