I have 3 tabloid size art boards that I need to print on the fly, why do I get a lot of extra pages when I set up the printing dialog box in Mac OS El Capitan? I see the artboards in the scrolling preview on there but see also empty pages.

Well, could it be a mismatch between the artboard size and the actual paper size of the printer that isn’t corrected by selecting Scale to Fit? :unsure:

If your artboards are larger than the printable area for your printer & you use the "Actual size" option in the print dialog, that is what you will get.

So I need to undersize my artboards to prevent this? That's no good.

No software can alter the fact that it is impossible to print anything at its actual size on a page smaller than that size, so you will have to do something to work around that fact.

 

From your thumbnails, it looks like you could easily narrow each artboard's width to tabloid size & slightly rearrange their contents to appear more centered on the page, but I don't know how important centering is for your project, so that may not even be necessary.
