Hello @WesPx,

Welcome to the forum.

You have created an artboard. In order to change the artboard dimensions enable the Transform panel and you can input your new dimensions there (using the width and height fields).

If you created a page in the New Document panel (untick create the artboard) then you would be able to change the page dimensions from within the Document Setup panel as shown in your picture above.

For future reference:

If you just resize the Artboard your existing layers will not rescale

If you need them to, try this...

Select the Artboard in the Layers Panel and do Layer > Convert Artboard to Object this will convert it to a Rectangle 

You can then use Document Setup to resize the document using the Rescale option to rescale all the layers

You can then add an Artboard back to your document (using the Artboard Tool) if so desired
