A new bug that just appeared in the 2.1.0 beta. When using the Adjustments panel, applying a Preset causes all of the presets for that particular adjustment to (i) lose their names; and (ii) become iterations of the "default" value for that preset. Closing the adjustment category and re-opening it immediately resets the values to their custom names and also lets the custom values work. However, choosing a Preset in this reset category again causes the presets to all lose their names and values.

I didn't even get that far (on Windows). When opening up Adjustments and peaking, they're all "Default" already. Clicking each one produces a default profile. None of them do anything actually.

LUT has two Default folders: "Default", "Default 2"

I probably should have added this info in the original post. I am using a Late 2019 iMac, running macOS Big Sur. 72 GB of RAM. Intel i9 processor. Nvidia ProVega GPU added.

Thanks RichardMH - this will affect any of the presets in the Adjustments, no matter what the Adjustment is. It is also worth noting that on iPad selecting a different category will just cause the app to crash.

The issue "Adjustments fail to show Preset Names when category is displayed" (REF: AFP-5944) has now been fixed by the developers.
This fix is included in build 2.1.0.1709 (or later) which is already available as a customer beta and will be included in the next release.
Customer beta builds are announced here and you can participate by following these instructions.

If you still experience this problem once you are using that build version (or later) please make a new thread referencing this one.
