The changes happen in the area from one text frame to the next text frame. You have scaled the contents of one or both of the text frames by dragging the content scaling handle (the outer bottom right one) instead of the frame scaling handle (the inner bottom right one). We all do this the first time we use Affinity. To fix it, try selecting all the frames and clicking the Revert Defaults button in the Toolbar. This should reformat your text but if you format it again now the way you want it, the size won't change as text flows from frame to frame. If that doesn't work for you, just delete the frame and draw a new one.
