Hello

I'm new to affinity designer and I wanted to know how to fill the.colors in the.shapes that we created ourselves with the pencil and pen and vector brush tools without going through the circle and triangle shapes.

You select the curve/shape that you have drawn and use the Colour panel to choose a fill for it. While drawing there is a checkbox on the Context toolbar which is off by default which will allow you to see the fill colour.

I have never mastered color management, period, so I cannot help with that.
