Manually select objects in AP, can I?

I'm not sure what you are asking about. Do you mean what happens with the Move tool active when you click on a layer or something else?

Hi leaf707,

Welcome to Affinity Forums :)

The Layers panel is simply highlighting the object you have selected on canvas. It doesn't switch to another unless you click/select another object (with a few exceptions like adding adjustements layers - they become selected when you create them since you usually want to edit its parameters/sliders immediately).
