Affinity cant read these data in many cases, e.g. Canon RAW file and „picture profiles“ It will use only some like white point. In addition, you can use the Development Assistant to influence if and how brightness and tone curves get applied. Finder is probably displaying a JPG preview of the RAW image, created by your camera and with all the camera settings applied. Photo, on the other hand, is probably showing you the actual RAW data as carried directly by the camera without any of those settings applied. Photo's Develop Persona leaves it up to you too apply adjustments to make the image look like you want it to. However, in the Develop Assistant you can influence this processing to some extent. You can choose to apply a default Tone Curve, and/or to apply an Exposure adjustment.
