According to them, the value of the wheel on the Adjustment panel is not adjustable with the Apple Pencil. The panel disappears when touched (supposed to improve view of changes being made) but sliding the pen either left/right or up/down will still adjust the controls even though they can’t be seen. You can also tap the controls and manually enter a number.
