Welcome to the Serif Affinity forums, Ian.

Were you expecting the applications to provide some fonts? They don't, but just use fonts installed on your system already.

Can you provide more information, screenshots, etc. to help us understand the problem?

Another issue may be related to this.

Apple Ventura removed Iowan Old Style font from the Font Book. All files in AD1 using this font now have the letters replaced with boxes in AD2.

I have reinstalled the font in the Font Book and it now works with NEW documents.  However all previously created files open with boxes that must then be selected and Iowan Old Style selected again. 

Not a great solution with 3000+ files.

Could it be that AD is not recognizing the same font name?

You probably have a different issue.
Apple hides certain fonts which they call "Document-support fonts."

"These fonts are available only to documents that already use the font, or to apps that request the font by name. Some are older fonts that were included with earlier versions of macOS or Apple apps."

I am surprised you can see the fonts with a new document.
We have determined that extracting and renaming the fonts makes them work again.
But in your case that would be difficult as you would still have to reapply the fonts.
I am curious if extracting and changing some other parameters works.
Will PM you to test.
