It would be really handy to have an onscreen tab to GoTo a page number to be able to quickly move around documents.

If it’s already there… I can’t find it

You can assign a shortcut to Document -> Go to Page…

or type your page number where you see 1 of 1 in the screenshot below.

Is this what you are asking for?

As described in the Help:

  • Pages Studio
  • View Tool > Context bar
  • The page's icon on the workspace (document view)

Having just released Publisher on iPad…I would have thought there would already be an assortment of iPad specific Tutorials.

But alas, there are only a few rudimentary ones (as usual from the other previous Version 1 apps).

‘Diving into any advanced things, shortcuts, or other unavailable on iPad items are always a frustrating task to figure out.
