Open the Font Family menu from the Context Bar which has a filter control in the top-right corner - click the icon of an O with a V and it will show you your variable fonts, providing you have any installed.

Can all of these be open at once, or must one (a) decide which to use in a document or (b) switch back and forth?

These are just filter controls to reduce the length of the list, you can use any combination of fonts you want. By default, all fonts are shown in the list and an icon is shown beside each font to help you identify which type it is.
