I received 1000 documents that had been scanned 2 pixels x for every 1 pixel y making them stretched out.

I tried Document>Resize Document and the image does not change.

I tried Document>Resize Canvas and the image gets cropped.

Do you mean stretched out in one direction only? Twice as wide as the original but the same height?

If yes then when changing the document size you'll have to click on the lock icon between the two H and W dimensions to change only one testing. It is locked by default.

I have never mastered color management, period, so I cannot help with that.

I cannot find any documentation for it.
