Affinity Publisher - Problems with Greyscale

Hi everyone,

I hope my English is good enough for you to understand.

In Affinity Publisher, I used the greyscale for the fonts: grey 0% and opacity 100%

But using the pipette tool (I hope it's also this name in the English version), the font is suddenly grey 5% (and opacity still 100%). 

Do you have any ideas how this could be fixed? I'd be very grateful...

Are you using a CMYK document? If yes then use that colour panel to set the colours. I think that the Grey colour panel is using colours from an RGB model to set the greys when using the Grey colour panel. This then translates into what you see with the pipette.

I have never mastered color management, period, so I cannot help with that.

Yes, I'm using a CMYK document. The color panel indeed shows a pure black! I don't get why the RGB model doesn't come out with a pure black to be honest, but if the result is 100% black, I'm happy with this. 

Edit: 
I understood the answer a bit wrong I see; the printing house told they wanted the font only in K, not CMYK. So at first, I set the font on 0% CM and Y, but 100% K, but they weren't satisfied with this so I tried greyscale and then this issue happened...
