After the last software update, the software has stopped working for me. When I open a raw image, it crashes. When I open a jpg, it displays a black screen with a garbled histogram and pan view.

Welcome to the Forum. 

There are a few things you can try. Could you try unchecking Metal Compute Acceleration under Preferences > Performance and seeing if this helps. 
If the issue persists then try holding down Command on your keyboard then opening the application. A 'Clear User Data' window should appear, at this point press 'Clear'. 

If that does not help then please could you attach your crash report, you can follow the link below if you need help finding the reports.

On Mac it is still the Control  key that is used for this operation.

I have never mastered color management, period, so I cannot help with that.
