Canvas size Affinity designer

When resizing documents, you have the option to scale the objects to match the new canvas size, or to anchor the objects at their current size to be manually resized after changing the canvas.

Have you no File > Document Setup?

If you are using Artboards then you will have to change the size of the individual Artboard(s) instead.

I have never mastered color management, period, so I cannot help with that.
