The updates say they are optimized for Monterey, but I can't update to that because my computer is too old. Will the Affinity updates still work correctly, or should I keep the versions I have now until I get a new computer?

Go to the Affinity/serif website and check the technical specifications for Designer and Photo.

I have never mastered color management, period, so I cannot help with that.

FWIW, I use all three Affinity apps on my iMac running Catalina. I have not found any problems in any of them unique to that macOS version.

I'm still running Mojave and all three apps work here.

I use them still on one older Mac under MacOS El Capitan and on a MBP under MacOS Catalina without problems so far, so that might hopefully answer your question!
