Are there any good brush tutorials? The ones supplied by Affinity don't tell me what I need to know, nor do any of those on Youtube or Linked-In learning. What I want to do is illustrate rivers in a marshy area of a map as per the illustration attached. I thought I'd be able to just draw a wiggly line which got narrower in width over distance, but I can't figure out anything about that and there is a lack of any information on this technique either in the help files, the tutorials or Youtube or Linked-In.

I think you would have to work that out yourself.  Using different brushes to create the lines.  I do think i saw a brush that trails off on one end, but i dont remember which one it was. You might search how to create your own brush that does that, using one of the brushed as a starting place.  Another option would be to copy things that look like that and past in place. change the colors on them etc.  Hmm, you could try creating the rivers outline with the node tool, just a skinny/narrow shape, that gets narrower at the end, then fill it.  I think that might be where i would start. Im sure people with more experience with help.

Experiment with the pressure properties | graph on the stroke panel. and toggle the pressure options on the context toolbar. This should help you achieve the results you are looking for.
Expand the stroke to outline and you can add further edges to the object with the outline tool OR add additional edges (Strokes) with the appearance panel

Blank template below has predefined pressure properties for lines
