These are just screen size templates for designers who are designing specifically for those devices. Which device is it you are designing for.

Are you talking about the presets of various document dimensions, presented when creating a new document via the menu File > New… ?

No, this device presets can get used if someone wants to create layouts for screen design only. – What kind of project do you want to create?

Actually you can start with any preset, or ignore all of this presets and do all settings in the right area as wanted for your project.

@Lawanda Brown, Which Affinity program did you purchase, Designer, Photo or Publisher?

I recommend you start viewing some tutorials, instructional videos. There's several free ones available.

Just think of the Devices as paper sizes. Admittedly very odd paper sizes, but that is all they are. 

You can start a project with any of the presets.

I have never mastered color management, period, so I cannot help with that.

They are the screen sizes of various mobile devices (iPhone, iPad, Kindle Fire, Nexus, etc.), plus a few defaults for DPI, document units, & 'Actual size' zoom commonly used when designing mockups for those screens.

If you are not designing screen mockups for any of those devices, you can ignore the "Devices" tab completely, or use any of those presets as a starting point for your own documents.
