In the desktop-version of Affinity Photo, there is a button in the context bar you can activate the pressure sensitivity with. Is it possibly the brush symbol in the bar on the right side of your screenshot? Below the white circle?

Think I was mistaken. Have you tried to set the Shape in the Dynamics window (your first screenshot) to "Pressure" and to 100%?

Try with larger brush setting, say around 150px. Might be easier to see the effect, especially pressure.

I'm not an iPad-user, so I misunderstood what I saw on your screenshots. Sorry for that. I think the settings are okay (but on your last screenshot "Force Pressure" doesn't seem to be activated). I assume that the problem depends on the stylus or its connection to Affinity. Do you have other apps to approve the pressure sensitivity of your stylus (something like Krita; GIMP or even Affinity Designer f.e.) and do they work correctly?

I don’t think any styli other than either generation of the Apple Pencil are pressure sensitive. Even the Apple-approved Logitech Crayon only has tilt sensitivity, not pressure sensitivity.

I’ve just ordered an IPad Pencil 2nd generation. I expect to receive it next week. 
 

I think/hope that will solve the problem!
