So I took a picture and used the Ellipse tool to create it as a sphere shape image, but I cant get rid of the checkered background, which was part of the original picture. I want to remove that so I can add text around the outside of the picture at the top and bottom.

Any suggestions?

Go to Document and uncheck Transparent Background

You could also add a Fill Layer below the Background image layer if you wanted a background other than white.

Is there a way to make the transparent checker larger? so I can fit in fonts at the top and bottom.

The checkerboard pattern isn't a part of the picture. It is just the pattern Affinity uses to show transparency. If you want more of it to be transparent, either make the ellipse smaller or use the Erase Tool to erase part of the background pixel layer.
