select the brush, keep select, then a window pops up where you have the option "reset" (= zurücksetzen in my pic)

I click on the brush, changed the settings then closed the brush. I chose the brush again and went into the brush 'edit'  and clicked reset but it didn't change back to the original setting.

I am sorry to hear...I've just tried it myself, it worked(see video)....but maybe some of the more experienced users have an idea why your reset does not work...

If the iPad applications work the same way the desktop applications do, the Reset button simply resets it to the way it was when you last entered Edit mode for the brush. If you closed the Edit dialog with changes, they're permanent.

That means that it is important to duplicate a brush and experiment with the duplicate, rather than changing the original brush.

On the desktop applications you can reset all the brushes back to the factory defaults, which also deletes any brushes you've added. So it's important to make sure you have good backups of the brush categories so you can reinstall them after the reset. There are two ways of doing that reset on the desktop, but I don't know anything about what will work on the iPad.
