How I change the brush in stroke?

You have posted this in the “Share Your Work” section of the Forums which is for people to show others the work they have done.
It should have been posted in the “Questions” section instead.
A moderator will be able to move it over for you so please don’t create a duplicate elsewhere; just wait for it to be moved.
Posting in the correct section helps people to find your questions more easily, so you can possibly get quicker answers.

From the Tools panel you have shown, with the View Tool on top, I'm going to guess you're in Photo.

The Textured Stroke icon that you have shown in your screenshot allows you to change the stroke but it works only for Vector brushes and Photo supports only Raster brushes. Therefore, if you're in Photo, you cannot do what you want, except by actually painting a stroke with one of the Raster brushes.

But if you have Designer available, just edit your file there (File > Edit in Designer) and once you've clicked that icon switch to the Brushes panel and pick the brush to use.
