Some of the brushes don't stroke the complete path, when using a closed path shape there these brushes leave a gap and I can't seem to adjust the brush to extend the full distance. I have tried changing the ending offsets etc. How do I fix this?

Somewhat counterintuitively, an open path works better than a closed one! Break the path at the end nodes and make sure that the stroke isn’t set to use a butt cap.

While I'm at it... Do you know if I can manually input pressure sensitivity values?

I don’t know of a UI feature which allows you to adjust the values numerically, if that’s what you mean.
