Berlingo
I have just downloaded the latest version of Affinity Photo now when I try and download CR3 files from the SD card they import as default Affinity files. Can anyone help by telling me how to remove the default setting my operating system is Big Sur on a MacBook Pro.
Old Bruce
I would copy one of the files (CR3) onto the desktop and then choose File > Get Info in the Finder. Now in the Get Info window look for Open With, there should be a dropdown menu choose the application you wish to use to open all the CR3 files from the list. After selecting that application hit the Change All button and click the yes I really do want to change all of the files (CR3) to be opened with application XYZ. Quote Mac Pro (Late 2013) Mac OS 12.7.6 Affinity Designer 2.5.5 | Affinity Photo 2.5.5 | Affinity Publisher 2.5.5 | Beta versions as they appear. I have never mastered color management, period, so I cannot help with that.
Berlingo
thank you for reply, unfortunately I do not have these options, affinity locks all options and prevents any changes. I have completed some further research and I think it is down to the fact that it is a newly released camera and it is not recognised by Apple so it allows Affinity to control the download. hopefully Apple will release an update soon. again thanks for your help

Affinity cannot "lock" these options because they are controlled by the OS. Likewise, Affinity cannot control what can be downloaded from a camera. If what @Old Bruce suggested is not working for you, it is probably because you have misunderstood how to open or use the "Get Info" window to set the default app for the CR3 filetype, or possibly that you do not have any other app installed that can open that filetype.
