How to Edit crushed colours?

If by peak you mean the height of the histogram, I just ignore it, all that means is there are a lot of pixels with that level of 'colour'

I have never mastered color management, period, so I cannot help with that.

The relative number of pixels.

Do a test with some mid range colours to see for yourself. Make some documents (small size, say 100 pixels square) and fill different portions with different colours, the more area you fill with a mid range colour the higher that will be. Move your cursor over the histogram and watch the readout change as to the number of pixels.
