Choose the Rectangle Tool from the Shape Tools flyout, create a rectangle of the appropriate size and position it as required. Go to the Layers panel, drag the rectangle layer and drop it onto the thumbnail of the layer that you want to crop.

How to crop out the image according to the outline?

In Affinity Photo, select the background with the Selection Brush Tool and then press the Delete key on your keyboard to delete it.

Before trying to delete the selected background, make sure the photo is on a ‘Pixel’ layer rather than an ‘Image’ layer, otherwise your selection outline will be ignored and the entire layer will be deleted. To convert an ‘Image’ layer to a ‘Pixel’ layer, right-click the layer in the Layers panel and choose ‘Rasterize’.

To be honest, I'm not sure if this is the best way to do this. Rather than hitting Delete, I would create a mask so that it is possible to fine tune the selection if needed. (Which is quite likely when cutting out hair, fur and feathers!)

Good point, Paul! I think my brain must have deserted me when I posted yesterday!!

It’s perhaps worth mentioning that a mask will work on an ‘Image’ layer, so there’s no need to rasterize anything.

If you just want the bird on a new layer all on its own (i.e. no background)

Use the Selection Brush Tool to carefully select just the bird.  (If using Designer, switch to the Pixel persona to find this tool)

Click the Refine button in the Context Toolbar (refine the selection if necessary)

In the Output drop-down field select New Layer then click the Apply button

The bird will now be on a new transparent layer all on its own

There are lots of Videos on YouTube for the Selection Brush Tool and what the different Refine options do.
