Does turning off Refine Edges sort it? It might be worth attaching the doc you're working on and showing us a screenshot of your Refine Selection dialog. It would show the preview, but if I were to change the adjustment brush to foreground or any other it disappears. Having some other problems in my system after the update to Big Sur, I opted to re install the OS. Now the problem seems to have been solved.
