I've got a book laid out in AP with two pages on each "page," which I think is called a spread. I need it to export it as a pdf with single pages to upload it to a Print on demand service. What's the best way to do this?

Select Pages instead of Spreads in the export panel. Are you certain that the 2 pages are in fact two page on one spread? Check the numbers in the Pages panel in Publisher it should look like this.

I have never mastered color management, period, so I cannot help with that.
