Set a paragraph the way you want it to appear then place the text caret somewhere in it and go to Edit > Defaults > Synchronize from Selection and immediately go to Edit > Defaults > Save. This will have all the new documents with that as the default.

Thanks for sharing, @Old Bruce. I didn't know this existed.

I tried to use this to also change the default for the gradient tool to a white-to-black one, rather than white-to-grey. The problem is that every vector shape you create from then on will be filled with a white-to-black gradient. I then changed to a full white fill as a default, hoping that somehow the white-to-black gradient would also persist in the background as a default for when you use the gradient tool, but nope. Any suggestions?
