Ctrl+Shift+V for Unicode text

You can assign a shortcut of Ctrl+Shift+V to Paste Special... if you want one, @Bogdan, via the Preferences for Keyboard Shortcuts.

But if you're asking specifically for Ctrl+Shift+V to be for Edit > Paste Special... > Unicode Text that would be very different from all the other menu shortcuts. The Affinity menu shortcuts are just the top level and next level, and don't go down to the sublevel at all.

That is not currently possible. And if there are multiple formats on the clipboard, it is not clear to me how the Affinity applications choose the default format. All you can do, today, is select the shortcut to use for Edit > Paste Special... and then manually select the format from among the listed choices.

Being able to set a preference for the default format to choose, and a shortcut for that, seems like an interesting idea.
