Color Replacement not working properly

I have a colored drawing that I would like to make black and white (to use as a coloring sheet for children). When I go to color replace the caramel colored shirt and select white as the replacement color, it colors it a dark grey, the other colors change but not to white, but as a somewhat pale version of the color, i.e. lavender becomes a beige, but not white. I have saved it as a jpeg and tried, same results as with an affinity photo doc. What's up?

Which program/application are you using? Designer, Photo or Publisher? Each has different tools which would be useful for this.

Mac Pro (Late 2013) Mac OS 12.7.4 
Affinity Designer 2.4.1 | Affinity Photo 2.4.1 | Affinity Publisher 2.4.1 | Beta versions as they appear.

I have never mastered color management, period, so I cannot help with that.

The colour replacement tool is probably not what you want to use, I would use the threshold filter on the layers panel...

The Colour replacement tool should really be called the hue replacement tool as that is closer to what it actually does. Using white is a bit like desaturating the colour, that is why it was turning a shade of grey. To see this for yourself you can use the HSL filter, select the red colour dot and use the picker and click on the shirt, then drag the saturation shift to the left -100% and the shirt will turn the same grey as on the screenshot pic.
