Add Global Color from Current Fill

No unfortunately not, it still requires manual selection, even from the swatches burger menu drop down.

Personally I prefer to first add a local color to have it named based on color values, and then convert the created swatch to global by using the command in the Swatches context menu, like this:

... whereas if you want to create a Spot Colour you need to go the long way via the swatches burger menu, because only there you get access to this option (and my name it separately afterwards via right-click):
