just starting with Mac and Affinity

It can easily be done.

 

Left-click once on an untouched original photo of yours to highlight it, then right-click it and from the drop-down that appears, select «Get info» from the list.

 

A new window will open. In that window, select «Affinity Photo» from the drop-down menu in the «Open with:» section to change the application that will open files with the same file format in the future.

 

That ought to do the trick.

Just an additional note, once you've selected Affinity Photo, click on the "Change all" button, otherwise just that one file will be changed.  Note that this will change files with that particular extension, if you use more than one for the same type of image (.jpg, .jpeg) you will need to repeat for each extension.

There's an alternative and arguably better way of doing this: with the SD card inserted, launch Image Capture from the Applications folder (or just use Spotlight). Your device will appear in the column on the left. In the bottom left corner of the window is a small arrow icon in a box—if it's pointing up, click it to open the panel. You can now choose which application to open when the card is inserted, or you can choose No Application.

 

This same trick works for any device: for example, if you wanted your iPhone to launch Aperture, attach the phone, launch Image Capture and set your launch option to taste.
