How do I make text a vector, compound object, that I can apply a gradient gold look to?

I am switching over from AI, and cannot figure out how to make my font a vector object - then make it a compound path, so that I can apply a gold gradient style?

I'm trying to learn, but so new still, I can't figure out how to adjust the styles either, is that possible?

Welcome to the forums.
You don’t need to convert the text to curves just to give it a gradient fill or apply a Style.
You don’t say which Affinity application you are using but I’ve attached a short video showing how to apply a gradient fill to text in Designer.
This is just one way and there are many others.
You can’t modify a Style, but you can add your own new versions.
