I want to make font color white or Black or clear? in Affinity Photo.

Just to make sure I have understood your question are you trying to change  the fill colour of a text object?

Yes, using Artistic Text tool, I simply want to make the text 100% White Black or clear.?

You should just need to select the text then choose your colour from the colour tab.

where is 100% White? or Black or clear?

If you change the dropdown to CMYK sliders you can set all sliders to 0 then set the K slider to 100 or 0 for black and white. By clear do you mean completely transparent? If you do then you just need to hit the white circle next to the colour picker in your screenshot.
