You should just need to select the text then choose your colour from the colour tab.

If you change the dropdown to CMYK sliders you can set all sliders to 0 then set the K slider to 100 or 0 for black and white. By clear do you mean completely transparent? If you do then you just need to hit the white circle next to the colour picker in your screenshot.
