One benefit would be that the layer would be completely locked from doing edits on since you can't draw or do any destructive editing until rasterising, something that the current layers system in Affinity lacks. Trying to work around this issue by converting to an image layer and disabling the assistant functions would only be applicable to raster layers anyway, while a proper lock icon could be applied to vector shapes and would be useful throughout the entire Affinity suite.
