Depending on what you want, you might be able to get away with using the Contrast Negate Blend Mode on the text layer (see attached GIF). Edit: Even with CMYK you can get it to work. You just have to edit the font colour. Negative side effect: To get the part of the font inside the image pure-white you have to change the font colour to C100M100Y100K100. Which printing service wants to print this? All other values would create a black-to-white gradient. See image. But I doubt anyone will see this. One step shorter in fact. But why not keep it as simple as possible?
