Using the text tool, when I want to change the text box, change the width, is the letters supposed to stretch with it? How can I change the text box without it affecting the letters? 

 

and is it possible to deselect the text tool without having to click on another layer?

Affinity has two text tools, Artistic Text and Frame Text. If you want the text the wrap inside the text box then just use Frame Text.

 

Ah cool. I'm a shortcut person, so I didn't notice there were to text tools.

 

Press V, or any other tool shortcut.

 

doesn't work in artistic text tool. that just adds letters to the text. at least in frame text I can click outside the canvas to exit it.

If you are trying to deselect the current text object, press the Escape key a few times. Once will remove a current text selection, if there is one, leaving a blinking caret. With the blinking caret, pressing Escape will remove the caret and leave the entire object selected. (In this state, V and other short-cuts will work as for other tools.) Then another Escape will leave you with nothing selected at all.
