    You can right click on a stroke in the appearance panel and Duplicate - which will create a copy of the existing stroke including its pressure profile. Does that help?

    Actually currently for SVG we will always convert a variable font to curves. For PDF as Walt suggests we effectively create a new static font with the attributes applied which we embed within the PDF file. i.e. if you use 5 variations of the same variable font within your document, the PDF will have 5 'different' static fonts embedded.
