Hi Jake,
Welcome to Affinity Forums :)
Select the line with the fill/stroke properties you want to become default then click Synchronise defaults from selection in the main toolbar (the blue cloud icon with an up white arrow). Affinity Designer will use the attributes of that selection from now on to create new lines/objects.
You can reset the attributes back to their defaults (grey fill/no stroke), clicking on the Revert defaults icon (on the right of the Synchronise defaults from selection icon).

Draw all paths first including the holes, then subtract these paths (holes) from the main shape path using boolean operations (menu Layer ▸ Geometry ▸ Subtract or using the respective icon in the main toolbar). Convert the resulting path to a selection or keep it as a clipping path as you see fit.

Welcome to Affinity Forums
Draw a shape/object, set a stroke width, then tick Scale with object in the stroke width popup (context toolbar). Then go to menu Edit ▸ Defaults ▸ Save. Object of the same type should now have this attribute ticked by default.
Note that for existing documents you don't have to tick this attribute for each object/curve one by one. Select all objects/curves at once and tick the checkbox to apply it to all of them.

Thanks for the compliments! I am happy you're enjoying the brushes.
No need to be embarrassed, I've been doing this for a while and STILL learn new techniques and features- it's what makes it fun!
To change what side of the path the stroke sits use the Align options in the Stroke window. by default the stroke is in the center, but you can position it on the outside and inside with the other buttons.
