I put together a quick video that can get you started but is by no means a comprehensive tutorial. I do go over using Add Noise and Levels.

So you want to learn how to make starry skies in addition to becoming familiar how everything is done. I can't promise my video will be exactly what you're looking for, but I will do what I can to help. If a method is taught in a tutorial, then I wouldn't say using that method is copying.
I understand that it confuses you when a key command is used without an explanation of what is does. For this, I will say I will use two.
1. Alt + Drag
This creates a duplicate of the selected object.
2. Command/Control + J
This creates the "Power Duplicate." It takes the previous duplicates and replicates them.

I second John's suggestion above.
I paid $15 and it is still $15 for two more days.
Simon Foster has produced a large selection of tutorials that not only explain 'how to do' but also 'why to do' and are set at a slower pace.

I'm currently working my way through the Udemy 'Affinity Photo: Solid Foundations' tutorials. This currently costs £30, but I bought it for £10 on special offer. I certainly feel it was a good buy at that price. I am around half-way through and am having no trouble following it.
