I see that video was uploaded before we released 1.6.0.75. Does it still happen in that build? Does it still happen if you check or uncheck Preferences > Tools > High precision table input?
For version 1.6.0.75 this problem is relevant. I did not shoot the video again and reboot.
Setting a checkmark does not affect the appearance of this problem.
The remaining problems are considered by the developers? I wrote back about them a long time ago, but they are from version to version still relevant.

Your question really belongs in an Affinity Designer thread, not an Affinity Photo thread, but what you show in the YouTube clip is happening because you can only 'add' closed curves. If a curve is unclosed, as in your example, the program will close it before performing the 'add' operation.

The cursor size does not vary with the pen pressure it is designed to show the maximum width of the brush tip. I'm going to move this to our feature requests section for consideration as it's more a desired feature than a bug

To my knowledge it is not possible to apply a gradient perpendicularly to a line.
As a workaround, you can draw a thick stroke, put it in a color. Then copy this stroke and paste it on itself. Then change the color of the copy and reduce its thickness.
Then apply a "Gaussian Blur" effect to the copy until you get the desired effect.
The effect obtained is not really a gradient but may perhaps be useful in some cases.
